    What about soups?

    Hi,

    I do not know about soups' status in India but in Poland we use to eat a lot of them. Today I would like to show you the "Spring cream of spinach and garlic soup". The dish looks extremely spring-like and decorative. Maybe it sounds trivial, but you should remember to clean the spinach thoroughly and remove the thick, hard stems. Grinding sand and unblended grains effectively ruin the tasty effect of the soup.

    Ingredients:

    400g of spinach
    3 cloves of garlic
    half an onion
    2 potatoes
    1l of vegetable stock
    1 tablespoon of butter
    100ml of 18% sweet cream
    4 eggs

    Zuppa Toscana Soup. So good, and even better than the restaurant version. Easy Crockpot meal. Even Better with Breadsticks

    Ingredients

    1 pound Italian sausage (spicy)
    4-6 russet potatoes, cut into bite-sized cubes
    1 onion, chopped
    2 tablespoons garlic, minced
    32 ounces chicken broth
    1/2 bunch kale (or swiss chard), destemmed and cut/torn into bite-sized pieces
    1 cup heavy whipping cream
    2 tablespoons flour
    Salt and pepper to taste
    Cayenne pepper to taste
    1/4 cup bacon, cooked and chopped
    Order Ingredients Powered by Chicory

    Brown sausage links in a sauté pan. Cut links in half lengthwise, then cut slices.
    Place sausage, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
    Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.

    30 minutes before serving:
    Mix flour into cream removing lumps.
    Add cream and kale to the crock pot, stir.
    Cook on high 30 minutes or until broth thickens slightly.
    Add salt, pepper, and cayenne to taste.
    Top with bacon immediately before serving.

    I like to add freshly grated asiago cheese as a topper as well.

    I've recently had a buffalo chicken soup from one of my favorite restaurants, Ye' ol' Squire. It's one of the best soups I've had and haven't quite found a recipe that turns out so well. Anyone got recommended recipes to try out?
