Make it like a soda if you have a keg, we let our yeast ferment in a carboy and then bottled our last batch and yeah, stuff doesn't taste that great and gives me headaches. Thats my 2 cents. We are going back to doing it soda style and kegging.

Never brewed, but ginger beer would be at the top of my list if I started.
